Tomato and White Bean Soup

INGREDIENTS

Recipe

  • 1 onion diced

  • 1 clove of garlic

  • 28 oz crushed tomato’s

  • 1 can of large white Lima beans

  • 2 cups water

  • 1 tbsp bouillon 

  • 4 tbsp vegan butter

  • 1/4 tsp salt

  • 1/4 tsp black pepper 

INSTRUCTIONS

  1. In a sauce pot, add butter, onion and garlic, and saute until lightly browned.

  2. Add diced tomatoes, water, vegetable bouillon and lima beans. Bring to a boil, and then simmer on medium heat for 20 minutes.

  3. Pour soup into blender and blend for 2 minutes until smooth.

  4. Garnish soup with pumpkin seeds, Brightland Basil Olive Oil, sea salt and black pepper to taste.
