Tomato and White Bean Soup
INGREDIENTS
Recipe
1 onion diced
1 clove of garlic
28 oz crushed tomato’s
1 can of large white Lima beans
2 cups water
1 tbsp bouillon
4 tbsp vegan butter
1/4 tsp salt
1/4 tsp black pepper
INSTRUCTIONS
In a sauce pot, add butter, onion and garlic, and saute until lightly browned.
Add diced tomatoes, water, vegetable bouillon and lima beans. Bring to a boil, and then simmer on medium heat for 20 minutes.
Pour soup into blender and blend for 2 minutes until smooth.
Garnish soup with pumpkin seeds, Brightland Basil Olive Oil, sea salt and black pepper to taste.
