Lemon Cookies

INGREDIENTS

  • 2/3 cup almond flour

  • 2/3 cup tigernut flour

  • 1 tsp baking powder

  • 1 egg replacer egg

  • 1/4 cup coconut oil melted

  • 1/4 cup water

  • Zest of one lemon

  • 4 tbsp lemon juice

  • 1/4 cup monk fruit sugar

  • 1/4 tsp vanilla extract

  • 1/8 tsp salt

INSTRUCTIONS

  1. Preheat oven to 350 degrees F. Line baking sheet with parchment paper.

  2. In a mixing bowl, whisk together the flour, baking powder, and salt.

  3. In a large mixing bowl, mix together the lemon zest, lemon juice, sugar, water, egg replacer, vanilla extract, and coconut oil.

  4. Combine the dry ingredients into the wet until a dough forms.

  5. Scoop out a heaping tablespoon of dough and create a cookie shape. Try not to flatten them too much but I find if they are slightly flatter than balls they are better. Place onto baking sheet about 2 inches apart.

  6. Bake 12-15 minute until the tops have started to crack.
