Carrot Apple Soup

INGREDIENTS

Recipe

  • 1 onion diced

  • 2 tbsp olive oil

  • 2 cups chopped carrots

  • 2 honeycrisp apples

  • 2 tablespoons nutritional yeast

  • 1-2 tbsp Apple cider vinegar (optional)

  • 3 cups broth or water (I used bone broth)

  • 1/2 tsp salt

  • 1/2 tsp black pepper

    Garnish

  • Pumpkin seeds for garnish

  • Olive oil for garnish

INSTRUCTIONS

  1. In large pot or dutch oven, sautés onion and olive oil on medium heat. Cook until tender and golden, stirring occasionally.

  2. Meanwhile, peel the carrots and apples and chop into chunks. 

  3. Add apples, carrots, broth/water, salt, pepper and nutritional yeast to the pot. Heat to boiling; cover and simmer for 30 minutes (carrots should be very tender). 

  4. Removed pot from heart. Carefully use a hand blender or put ingredients into blender (Vitamin) and blend until very smooth. Add the apple cider vinegar and blend again. 

  5. Garnish with pumpkin seeds and Brightland Olive Oil.
