Beans, Greens and Garlic

INGREDIENTS

Recipe

  • 2 cups of large white Lima beans

  • 2 tbsp olive oil

  • 4 tbsp Miyokos butter

  • 2 cups of spinach or other greens

  • 4 cloves of garlic

  • Juice of one lemon 

  • 1 tsp red pepper flakes

  • 1/2 tsp salt

  • 1/2 tsp black pepper

  • 1 package of hearts of palm spaghetti

INSTRUCTIONS

  1. Overnight soak Lima beans in water (I did for 6 hours and worked just fine. Boil 3-4cups of water. Simmer beans for 1 hour.

  2. In a medium saucepan, sauté olive oil, garlic and spinach for 15-20 mins. Season with salt and pepper and red pepper flakes (optional). Add the hearts of palm to pan and cook for another 10 mins. 

  3. Add the cooked (or canned) white beans to the pan and cook for a few minutes. 

  4. Serve with Violife Parm, drizzle of olive oil, or squeeze of lemon juice.
