Cauliflower Spinach Mash

INGREDIENTS

Recipe

  • 1 head of cauliflower

  • 4 cups spinach

  • 2 cloves of garlic

  • 2 tbsp olive oil

  • 2 tbsp Kite Hill Ricotta

  • 2 tbsp Miyokos butter

  • 1/2 cup almond milk

  • 1/2 tsp salt

  • 1/2 tsp black pepper

INSTRUCTIONS

  1. Bring a pot to a boil and use a steamer basket and add cauliflower. Cook until soft about ten minutes.

  2. While cauliflower is cooking, heat a sauté pan over medium high heat and add olive oil and diced garlic. 

  3. Add the spinach to the oil and garlic and cook about 2 minutes until spinach is wilted. 

  4. Add the cauliflower, spinach, almond milk, butter, ricotta, salt and pepper and blend until desired consistency. We like ours creamy but it’s also delicious a tad lumpy!
