Cauliflower Spinach Mash
INGREDIENTS
Recipe
1 head of cauliflower
4 cups spinach
2 cloves of garlic
2 tbsp olive oil
2 tbsp Kite Hill Ricotta
2 tbsp Miyokos butter
1/2 cup almond milk
1/2 tsp salt
1/2 tsp black pepper
INSTRUCTIONS
Bring a pot to a boil and use a steamer basket and add cauliflower. Cook until soft about ten minutes.
While cauliflower is cooking, heat a sauté pan over medium high heat and add olive oil and diced garlic.
Add the spinach to the oil and garlic and cook about 2 minutes until spinach is wilted.
Add the cauliflower, spinach, almond milk, butter, ricotta, salt and pepper and blend until desired consistency. We like ours creamy but it’s also delicious a tad lumpy!
