Gluten, Dairy & Sugar Free Waffles
You will all learn that I love baking with Tigernut flour. I swear it is the holy grail of flours. It adds fiber, protein and a bit sweetness to any baking recipe.
Gluten, Dairy & Sugar Free Waffles
INGREDIENTS

1/2 cup melted Earth Balance Vegan Butter (1 Stick)
1 cup Tigernut Flour
1/4 cup ground flax seeds
1/4 cup buckwheat flour
1 cup coconut milk
1 teaspoon vanilla extract
1/4 teaspoon salt
INSTRUCTIONS
Preheat your waffle maker. I use the Belgian Waffle setting on my Breville Waffle Maker.
Place the flax seed in a bowl with the coconut milk and let sit for 5 mins until you get a paste.
While the flax seed is combining with the milk, melt the butter in the microwave or on the stove in a glass bowl.
Combine the butter, flax mixture, Tigernut Flour, buckwheat flour, vanilla and salt. Stir until the lumps are completely broken up.
Spray a little bit of Avocado Oil or other oil on the waffle maker. Pour the batter into each square and wait until it alerts you that the waffles are done.
Drizzle with more butter, raspberries, maple syrup or any other yummy topping!
